SPINACH SOUFFLE


INGREDIENTS

1?4 cup onion, chopped 1 tablespoon butter 3 eggs, separated white sauce 1 cup chopped spinach, cooked and drained 1?2 cup parmesan cheese, grated WHITE SAUCE 2 tablespoons butter 2 tablespoons flour 1 cup milk or 1 cup light cream 1?2 teaspoon salt 1?8 teaspoon pepper


DIRECTIONS

Preheat oven to 350 degrees. Saute onion in butter. Beat egg yolks until thick and lemon-colored. Stir into hot white sauce along with spinach and cheese. Fold in egg whites beaten until stiff, not dry, peaks are formed; turn into greased 1 1/2 qt casserole. Set in pan of hot water and bake about 50 minutes. White Sauce: Melt butter, stir in flour and heat until bubbly. Gradually add milk or cream, stirring constantly; cook 1-2 minutes. Season with salt and pepper. Makes about 1 cup. Serve immediately.

SPINACH SALAD WITH HONEY BACON DRESSING


INGREDIENTS

8 cups torn fresh spinach 1 cup sliced fresh mushrooms 1?4 cup sliced green onion 1 medium tomatoes, seeded and chopped 1 hard-boiled egg, chopped 1?2 cup shredded parmesan cheese, shredded on large holes of grater 7 slices bacon, cooked and crumbled 1?2 cup honey 1?2 cup vinegar 1?3 cup vegetable oil 1 teaspoon yellow mustard or 1 teaspoon spicy brown mustard 1 teaspoon lemon juice


DIRECTIONS

Combine first 6 ingredients with 5 of the cooked, crumbled bacon strips in a large bowl. In a small bowl, whisk together the honey, vinegar, oil, mustard lemon juice and remaining 2 strips of cooked, crumbled bacon. Pour over salad. Serve immediately.

INGREDIENTS

SALAD 1 (10 ounce) can mandarin orange segments, drained 2 large granny smith apples, peeled, cored and cut into 3/8 inch cubes 1?4 cup lemon juice, freshly squeezed 1 bunch fresh spinach, trimmed, washed, remove stems and discard (about 10 ounces) 1 head romaine lettuce, washed, dried and torn into bite size pieces 1?3 cup pine nuts, lightly toasted DRESSING 1?2 cup frozen orange juice concentrate 4 tablespoons six-year-old balsamic vinegar 6 tablespoons extra virgin olive oil 2 tablespoons liquid honey 2 teaspoons poppy seeds 1 tablespoon Dijon mustard 1?4 teaspoon salt 1?4 teaspoon black pepper, freshly ground


DIRECTIONS

SALAD - Drain oranges, place into a bowl and set aside. Cube apples and place in a bowl. Pour lemon juice over; mix well to coat to prevent from turning brown and let marinate for about 1 hour or longer. Before using apples, drain any excess lemon juice. Prepare spinach and Romaine lettuce; dry on paper towels, and add to a large bowl. Add ice cubes and let chill for at least 1/2 hour to crisp. DRESSING - In a glass jar with lid, add orange juice, balsamic vinegar, olive oil, honey, poppy seeds, Dijon mustard, salt, and pepper; shake well to blend. TO SERVE - Remove ice from the greens and discard; drain any water. Add apples and pine nuts and toss to mix well. Add dressing mixture and toss to coat well. Arrange spinach on individual salad plates and top with 3 or 4 Mandarin orange segments. This dressing is also very good with young, mixed greens.

SPINACH PIE IN PUFF PASTRY (SPANAKOPITA)


INGREDIENTS

3 tablespoons unsalted butter 2 medium onions, chopped 3 garlic cloves, chopped 2 (10 ounce) boxes frozen chopped spinach, thawed & squeezed dry 1 cup feta cheese, crumbled 3?4 cup parmesan cheese, grated or shredded 4 eggs, extra large, beaten 1 tablespoon dry breadcrumbs (plain or seasoned) 1 teaspoon salt 3?4 teaspoon white pepper 1?2 teaspoon nutmeg 2 sheets frozen puff pastry, thawed 1 large egg, beaten with 1 tbsp water


DIRECTIONS

Preheat oven to 375. Line a baking sheet with parchment (preferable) but you can use aluminum foil with a light spray of cooking oil. Melt butter and cook onions for a few minutes, until soft. Add garlic and cook for another minute. Beat eggs in medium bowl. Add cooked onion, spinach, feta, parmesan, bread crumbs. Add salt, pepper, & nutmeg. Mix well with fork. Place one unfolded sheet of puff pastry on the parchment or sprayed aluminum foil. Spread the spinach mixture over the pastry, leaving a border of one inch all around the edges. Keep the spinach flat; do not pile high. Brush the edges with the egg wash made with the last egg. Cover with the second sheet of pastry that has been slightly flattened with a rolling pin to one inch bigger than the first sheet. (This ensures all the spinach will be covered). Press edges together with fingertips or fork, making sure mixture is sealed well. Brush just the top with egg wash, careful not to drip any down the sides. Cut a few slits in the top with a sharp knife to allow steam to escape. Bake 30-40 minutes, until golden brown. Can be served hot or at room temperature.

2 eggs 1 1?2 lbs lean ground beef 1?2 cup oats 1?2 cup wheat germ 1?2 cup shredded carrot 1?4 cup onion 1 (10 ounce) package frozen spinach, thawed 1?2 cup milk 1 teaspoon salt 1?2 teaspoon pepper 1?2 cup steak sauce


DIRECTIONS

Mix EVERYTHING together. EXCEPT STEAK SAUCE. Shape into a loaf and bake 45 min at 350, add steak sauce on top the last 10 minutes.

INGREDIENTS

3?4 cup boiled edamame, shells removed 1 cup frozen chopped spinach (1 small package) 1 (12 ounce) can garbanzo beans, drained 6 garlic cloves (this can be very strong, if you have an aversion to STRONG garlic taste, reduce the garlic!) 1?2 cup tahini 1?4 - 1?2 cup olive oil (I usually add the amount I need to get the consistency right) 2 teaspoons sea salt (about) 1 tablespoon red pepper flakes (I love these(but they make the hummus VERY HOT) (optional)


DIRECTIONS

Combine all in food processor. Add olive oil (water, or the "juice" of the garbanzo beans, if you wish)--either of these reduce fat to desired consistency. This is EVEN better leftover.

INGREDIENTS

1 (10 ounce) package frozen spinach, thawed and drained 1 cup sour cream 1 cup mayonnaise (not Miracle Whip) 1 (1 ounce) package Knorr vegetable soup mix (or onion soup mix) 1 (8 ounce) can water chestnuts, drained and chopped (optional) 1?2 chopped onion


DIRECTIONS

Thaw and drain the spinach. Squeeze the spinach with paper towels to remove excess water. Mix all ingredients together in a bowl. Let set in the fridge for a couple hours before serving. I like to serve it inside a hollowed out round loaf of bread. Scoop out the loaf and place dip inside. I use what I scoop out for making croutons. Serve with fresh vegetables.
