SPICY GINGER TEA WITH LEMONGRASS


INGREDIENTS

1 quart water 1?4 cup freshly grated gingerroot (no need to peel) 1 stalk lemongrass, cut lengthwise 2 bags herbal tea (or equivalent) lemon, to taste (I squeeze a whole lemon in) honey


DIRECTIONS

BRING the water to a boil. Reduce heat and add gingerroot and lemongrass. Simmer for ten minutes. Turn off the heat and add 2 bags or about 2 teaspoonfuls of your favorite herbal tea mixture. Taste and if it tastes too weak, continue steeping, if it tastes too strong add more water. Strain and sweeten with honey and add lemon to taste.

DIRECTIONS

In a large pot over low heat, warm oil and cumin; heat until cumin turns a darker shade of brown. Add salt, chili powder and lemon and pepper seasoning; mix well. Stir in tomatoes; once the juice begins to thicken add in chickpeas and mix well. Add in lemon juice and mix well; add onions and stir until they become soft. Remove from heat and place into a serving bowl; serve immediately.

DIRECTIONS

Stir together Sherry, cornstarch, and 1 tblsp soy sauce, then stir in sesame oil. Add pork, stirring to coat well, and let stand 10 minutes. Stir together sugar and remaining 2 tblsps soy sauce. Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds. Add bell pepper and stir-fry 2 minutes. Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes. Transfer vegetables to a bowl. Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds. Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes. Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more. Serve with steamed rice.

DIRECTIONS

Heat the oil in a large saucepan over high heat. Add pepper, ginger, carrots, garlic, onions and cayenne or chilies. Cook for 2 minutes, then add potato and stock. Bring to the boil and simmer 10 minutes. Transfer the vegetables to a food processor and pure until smooth. Return the pure to the saucepan and stir in peanut butter and tomato juice or mash the vegetables in the saucepan until slightly lumpy. Add sugar, salt and pepper. Serve sprinkled with green onions.

INGREDIENTS

2 teaspoons paprika 1 teaspoon chili powder 1 teaspoon ground dried ancho chile powder 1?2 teaspoon ground cumin 1?4 teaspoon garlic powder 1?2 teaspoon brown sugar 1?2 teaspoon sea salt 4 (6 ounce) salmon fillets 1 tablespoon maple syrup 1 tablespoon melted butter 1 tablespoon chopped green onion


DIRECTIONS

Preheat oven to 375 degrees. Combine the paprika, chili powder, ancho, cumin, garlic powder, and brown sugar. Place salmon on lightly sprayed baking dish or tray. Sprinkle the fillets with the salt, then rub with the spice mixture. Combine melted butter and maple syrup, then drizzle each fillet with a bit of the mixture; sprinkle each with a bit of green onion. Bake for 10 to 12 minutes, or until it flakes with a fork. Serve with rice or orzo pasta and steamed green vegetables like broccoli, gai lan (Chinese broccoli), bok choy, or green beans, drizzled with bottled fish or oyster sauce. Note: ancho chile powder is available through many Latin markets or at Penzey's online.
