STUFFED PEPPERS


INGREDIENTS

6 green bell peppers 1 lb ground beef 1?2 cup onion, chopped 1 tablespoon garlic, minced 1 egg, whisked 1?2 cup breadcrumbs 1 tablespoon parmesan cheese 1 teaspoon salt 1 teaspoon ground pepper 1 teaspoon red pepper flakes (optional) 1?2 teaspoon oregano 1?4 teaspoon parsley QUICK TOMATO SAUCE TOPPING 1 cup tomato sauce 1?4 cup water 1 tablespoon brown sugar 1 tablespoon vinegar 1 teaspoon prepared mustard 1 teaspoon Worcestershire sauce 1?4 teaspoon dried oregano 1?4 teaspoon dried basil 1?4 teaspoon garlic powder 1?4 teaspoon parsley flakes 1?4 teaspoon salt 1?4 teaspoon pepper


DIRECTIONS

Preheat oven 350 degrees. Lightly spray baking pan with cooking spray. Blanch peppers in boiling, salted, water 5 minutes. Briefly, and lightly, hand mix ground beef mixture, adding all ingredients from ground beef to parsley, except tomato sauce topping. With a tablespoon, stuff each pepper with meat mixture. Mix ingredients of tomato sauce and spices, or use any tomato sauce of your choice. Place 2 tablespoons of tomato sauce in baking pan covering bottom. (This will be a small amount of covering). Add meat stuffed peppers to dish. Drizzle tomato sauce over top of stuffed peppers. Add optional 1 piece of bacon to top of each pepper. Bake at 350 degrees for 50-60 minutes. When serving, dish out tomato "gravy" to top of each pepper.

INGREDIENTS

2 lbs ground beef 2 quarts water 1 (28 ounce) can diced tomatoes (undrained) 1 (29 ounce) can tomato sauce 2 cups cooked long-grain rice (1/2 cup uncooked) 2 cups chopped green bell peppers (about 2 large peppers) 2 beef bouillon cubes 2 tablespoons packed brown sugar 2 teaspoons salt 1 teaspoon pepper


DIRECTIONS

In 6-quart saucepan or Dutch oven, brown beef; drain. Add remaining ingredients; bring to boil. Reduce heat; cover and simmer for 30 to 40 minutes or until tender. Makes about 16 servings.

LOW-CARB STUFFED CABBAGE HOTDISH


INGREDIENTS

1 large head of cabbage, cored 1 tablespoon butter 2 medium onions, chopped 3?4 lb lean beef, ground 1?4 lb pork sausage, ground 1 cup white rice or 1 cup brown rice, cooked 1?2 teaspoon allspice 1 (28 ounce) can tomatoes 1 (8 ounce) can tomato sauce 1 (6 ounce) can tomato paste 1 teaspoon salt 1?2 teaspoon garlic salt 1 teaspoon thyme to taste sour cream


DIRECTIONS

Preheat oven to 350. In a large pot, steam the cabbage for 10 minutes or until the leaves are softened enough to peel away. Cool and separate leaves, gently shake off moisture, and set aside. Melt butter in a skillet and saute onions until they are golden. Remove half the onions to a bowl containing the ground beef and pork sausage. Mix in the rice and allspice gently with your hands. To the remaining onions in the skillet, add the tomatoes and juice, tomato sauce, tomato paste, salt and seasonings. Simmer for 15 minutes. Place a small amount of meat mixture on each cabbage leaf. Fold leaf over to enclose meat and starting at the stem end, roll up. Place rolls, seam side down in a buttered baking dish. Cover with tomato mixture and bake, uncovered for 1 hour. Serve with sour cream.

EASY WEEKNIGHT STUFFED BELL PEPPERS


INGREDIENTS

6 medium green bell peppers 1 1?2 lbs ground beef 1?2 medium onion, chopped 1 cup instant rice 1 (14 1/2 ounce) can diced tomatoes, with juice 2 (8 ounce) cans tomato sauce 1 (8 ounce) can tomato sauce (optional) 1 cup shredded colby cheese, if desired 1 -2 tablespoon Worcestershire sauce salt, to taste pepper, to taste


DIRECTIONS

Preheat oven to 400F. Cut tops off the peppers and scrape out the insides; making sure to get all of the seeds. Once cleaned out, place peppers in a casserole dish. If need be, cut a little off the bottoms to even out the peppers so they stand straight up. Brown beef with chopped onions. Drain off excess fat. Add tomatoes, 2 cans of the tomato sauce and Worcestershire sauce; salt and pepper to taste. Bring to a boil and stir in uncooked instant rice; cover, remove from heat and allow to stand 3-5 minutes. Stir meat mixture and spoon it into the peppers. *Optional-Pour remaining can of tomato sauce around the bottom of the baking dish. You can add a little bit of water to thin it out, if you desire. If not using remaining can of sauce, be sure to add 3-4 tbsp. of hot water to bottom of baking dish. Cover baking dish and bake in the preheated oven for approximately 30 minutes or until peppers are tender. Remove cover, sprinkle with cheese and bake for a few more minutes to allow the cheese to melt.

INGREDIENTS

MEAT BALLS 2 lbs ground beef 1 1?2 cups breadcrumbs 1?4 cup milk 1?4 cup chopped onion 2 eggs, beaten 1 teaspoon salt pepper SAUCE 1?2 cup chopped onion 4 tablespoons butter 2 tablespoons flour 2 tablespoons ketchup 1 (10 ounce) can consomme (undiluted) 1 cup sour cream


DIRECTIONS

Meat Balls: Combine all ingredients in large bowl. Mix well and roll into balls of desired size. Place on edged cookie sheet and bake at 350F for 25-30 minutes. Remove from oven, drain and set aside. Sauce: Brown onion in butter, add flour, mix well. Add ketchup and consomm, cooking slowly until thickened. Add sour cream, then meat balls. Place in casserole and heat in 300F oven until serving time. Serve over broad egg noodles or rice. *I usually don't add the full cup of sour cream, but just add a bit at a time until I think it is right for me.

INGREDIENTS

1 lb ground beef 1 medium onion, chopped 1 -2 garlic clove, minced 3?4 cup Pace Picante Sauce 1 teaspoon ground cumin 1?2 teaspoon dried oregano leaves, crushed 1?2 teaspoon salt 8 flour tortillas (7 to 8 inches) 1?4 cup melted butter


DIRECTIONS

Preheat oven to 475 degrees. Brown meat with onion and garlic. Drain, but do not rinse. Stir in picante sauce, cumin, oregano and salt. Simmer 5 minutes or until most of the liquid has evaporated. Brush one side of the tortillas with butter. On unbuttered side spoon heaping 1/3 cup of meat mixture into center. Fold 2 sides over filling, fold ends down. Place seam side down in a 13 x 9 x 2-inch baking dish. Bake for 13 minutes or until golden brown. To serve, top with sour cream, guacamole and additional picante sauce.

1 pie crust, pre-baked 1 pint ripe strawberry 1 (3 ounce) package strawberry Jell-O gelatin dessert 2 tablespoons cornstarch 1 cup hot water 1 cup cold water 1?2 cup sugar whipped cream


DIRECTIONS

Pre-bake pie crust. Cool. Slice the strawberries into the pie crust. In a medium saucepan mix the package of jello with the cornstarch. Add the water and the sugar. Cook over medium heat until boiling. Stir occasionally. Pour the boiling mixture over the strawberries. Place the pie in the refrigerator. Chill for 3-4 hours until the jello glaze sets. Serve with big dollops of whipped cream over the pie.
