STIR-FRIED ZUCCHINI WITH HOISIN SAUCE


INGREDIENTS

2 medium zucchini (approx 1 lb.) 1?2 teaspoon salt 1 tablespoon soy sauce 2 teaspoons hoisin sauce 2 teaspoons dry sherry 1?2 teaspoon sesame oil 1 tablespoon canola oil (or peanut oil) 1 teaspoon garlic, minced (1 clove) 1 teaspoon chili flakes 1?2 teaspoon sesame seeds, toasted


DIRECTIONS

Quarter zucchini lengthwise. Slice off the soft seed core; it's ok if some seeds remain. Arrange the zucchini, cut side up, on paper towels. Sprinkle with salt, set aside for 10 mins. Blot the zucchini quarters dry with paper towels. Cut quarters into 2 inch lengths. Mix soy sauce, hoisin, sherry and sesame oil in a small bowl. Heat a wok or large skillet over med-high heat for 1 min. Pour in canola/peanut oil; when oil starts to shimmer and ripple (very hot), add zucchini. Saute until zucchini browns and softens slightly (don't overcook- it might turn mushy), about 4 mins. Add garlic and chilli flakes, saute for about 15 sec. Add the sauce mixture, stir and cook just long enough for liquid to reduce and coat the zucchini (about 20 sec). Remove from wok, sprinkle with toasted sesame seeds and serve immediately.

INGREDIENTS

2 lbs fresh broccoli 1 tablespoon cornstarch 1 teaspoon granulated sugar 1?8 teaspoon salt 1?2 cup chicken broth 2 tablespoons soy sauce 1 garlic clove, minced 1?4 cup vegetable oil


DIRECTIONS

Remove and discard broccoli leaves and tough ends of stalks. Wash broccoli thoroughly, and cut off flowerets; set aside. Cut stalks into 1/2-inch pieces; set aside. In a small bowl, combine cornstarch, sugar, and salt. Add chicken broth and soy sauce, stirring until smooth; set aside. In a wok or large skillet, saut garlic in hot oil over medium-high heat until lightly browned. Add broccoli flowerets and stems; cook for 2 minutes, stirring constantly. Cover and cook an additional 2 minutes. Add broth mixture; cook, stirring constantly, 2 minutes or until sauce thickens.

INGREDIENTS

16 boneless skinless chicken thighs SAUCE 1?2 cup barbecue sauce (hickory flavoured is nice) 1?4 cup soy sauce 1?4 cup red wine vinegar 1?4 cup liquid honey 1 tablespoon chili powder 1 tablespoon Dijon mustard 2 teaspoons minced garlic 1 teaspoon ground cumin 1 tablespoon cornstarch 1 tablespoon water


DIRECTIONS

Preheat oven to 400F Spray a 9x13 baking pan with cooking spray. Arrange chicken thighs in pan in single layer. Whisk together sauce ingredients (barbecue sauce through cumin) in a medium bowl. Pour evenly over chicken. Turn pieces to coat both sides with sauce. Bake, uncovered, for about 40 minutes, or until chicken is no longer pink in the center. Remove chicken from pan and keep warm. Carefully pour sauce from pan into a small pot. Bring to a boil over medium high heat. Combine cornstarch with water and mix until smooth. Add to sauce. Cook until sauce is bubbly and thickened, about 1 minutes. Serve hot chicken with extra sauce on top.

DIRECTIONS

Put chicken in large pot with water. Add next 7 ingredients. Bring to a boil, skimming surface if necessary. Simmer for 1 hour, or until tender. Mix dumpling ingredients together until just moistened. Bring chicken to a slow boil. Drop dumplings by tablespoons onto chicken. Cover and cook 12 minutes.

INGREDIENTS

8 ounces good blue cheese, crumbled 1 -3 garlic clove, chopped 2 tablespoons dry white wine (drinking quality) 1 dash ground red pepper 2 tablespoons unsalted butter 4 small New York strip steaks (about 1 inch thick, about 2 pounds) or 4 small rib eye steaks (about 1 inch thick, about 2 pounds) fresh ground pepper 1?4 cup water chopped parsley (for garnish)


DIRECTIONS

In a medium skillet, combine cheese, garlic, wine, and red pepper over low heat. Stir frequently until cheese melts. Remove from heat and keep warm. In large skillet, melt butter over medium-high heat, and cook steaks to your liking, turning only once. (About 4- 5 minutes per side will result in steak done to about medium, depending on your cook top). Sprinkle pepper over steaks, remove from skillet and keep warm. Add water to skillet and heat to boiling, stirring constantly to loosen browned bits. Boil 2 minutes, then stir pan juices into cheese mixture. Pour over steaks and sprinkle with parsley.
