INGREDIENTS

1 medium spaghetti squash 2 tablespoons butter 1 small yellow onion, cut in half and very thinly sliced 1?4 teaspoon red pepper flakes (or more) 1 teaspoon fresh thyme 1?2 cup sour cream 1?2 cup shredded cheddar cheese

DIRECTIONS

Cut the spaghetti squash in half and remove the seeds. Place in a covered dish with a inch of water and microwave for 10 -12 minutes. In a medium sized skillet over medium heat, add the butter, onions, red pepper and thyme and cook until the onions are slightly brown in color. Salt and pepper to taste. Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well. Transfer the mixture to a buttered baking dish and top with remaining cheese. Place into a 375 for 15 20 minutes until golden brown on top.

DIRECTIONS

Trim fat from chuck and pork and grind together. Brown together till just light tan, stirring constantely. Add onions to meat, cook till onions are trainsparent. Add the following to the meat and onions: garlic, tomato paste,tomatoes,water, celery,parsley,oregano,basil leaves,rosemary,green pepper,bay leaf, brown sugar, black pepper,salt. Cook and bring to a boil stirring constantly. Turn heat to simmer, keep stirring till burner reaches simmer stage and don't scorch. Simmer about 3 hours stirring occasionally. Serve over spaghetti.

Continue to blend the dough until it has enlarged in size. Heat a pot of salted water to boiling add a tbsp oil. Put batches of your dough in the hopper of the spaetzle grater and grate the noodles into the boiling water. Do the recipe bit by bit lifting the noodles out of the water when they float Keep warm while you cook the rest. N>B> If you do not have a spaetzle grater roll out the dough to about 1/4" thickness and slice across then slice the other way to have them the size you want them. Boil the same as with the spaetzle grater. Enjoy.

INGREDIENTS

1 lb lean ground beef 1?4 cup chopped onion 1 (1 1/4 ounce) package taco seasoning mix 1 egg, beaten 2 cups cooked rice 4 -6 bell peppers 1 (19 ounce) can diced tomatoes 1 (15 -16 ounce) jar salsa shredded cheddar cheese sour cream

DIRECTIONS

Combine beef, onion, seasoning mix and egg in a large bowl. Add rice and mix well. Cut peppers in half lengthwise; remove seeds and membrane. Spread tomatoes on the bottom of an ovenproof 12 X 9 inch baking dish. The liquid from the tomatoes will reduce during cooking so if (like me) you like lots of sauce, add about a cup of water. This also helps make the peppers softer. Place peppers, cut side up, on top of the tomatoes. Spoon beef mixture into peppers, mounding as necessary. Top each pepper with salsa. Bake in preheated 375F oven for 40-45 minutes or until beef is cooked thoroughly and peppers are soft. Cover each pepper with cheese and return to oven, under the broiler, until the cheese melts- less than a minute, so watch carefully! Serve with sour cream and additional salsa.
