SOUTHERN CINNAMON SUGARED PECANS


INGREDIENTS

1?4 cup evaporated milk 1 cup sugar 1?4 teaspoon ground cinnamon 2 tablespoons water 1?4 teaspoon vanilla 3 cups shelled pecan halves


DIRECTIONS

In a large sauce pan over medium heat, combine evaporated milk, sugar, water and vanilla. Heat mixture, stirring often, until sugar is dissolved. Add cinnamon and stir. Some may float on top. Add 3 cups of pecans to mixture and stir to cover. Continue stirring pecans in mixture until pecans become coated well and mixture cooks away (gets absorbed/crystalized on the the pecans). Spread hot coated pecans on wax paper; try to separate them as you spread them on the paper. Let pecans cool completely. Break apart pecans and store in air-tight container for up to 2 weeks. To give as gifts, put in decorative glass jars or decorative tins lined with wax paper. NOTE: I've tried using brown sugar (1:1 with the white sugar), but the pecans have a tendency to come out sticky and the sugars don't get 'crystalized'. I have not tried these with turbinado or unbleached cane sugar yet. If they don't turn out right, I'll have to keep them for myself !

DIRECTIONS

In a large skillet over medium heat, saute onions in butter, when onions are tender add meat and cook until browned. Mix in mustard, Worcestershire sauce, vinegar, salt, pepper, sugar and catsup. Reduce heat, cover and simmer for 45 minutes, stirring occasionally. Serve over rice.

DIRECTIONS

In a blender or a food processor, blend together all ingredients until smooth. Spray a medium sized skillet with cooking spray and set heat to medium. Add the pancake batter to skillet and cook until sides are lightly browned. Top with a low sugar syrup, trans free butter and/or a few sprinkles of a sugar substitute and serve with fresh fruit; blueberries or strawberries are allowed and would go nicely.

INGREDIENTS

2 cups quinoa 4 cups water 1?4 teaspoon salt 1?4 teaspoon fresh ground black pepper 5 tablespoons fresh lemon juice 1 cup extra virgin olive oil 1?2 cup cilantro, chopped 2 teaspoons garlic, minced 1 cup corn 1 cup red onion, chopped 1 -2 red chili pepper, chopped (optional) 4 plum tomatoes, diced 1 cup cucumber, diced 1 avocado, dice


DIRECTIONS

Place Quinoa in a medium-sized pan, add the water, and bring to a boil. Reduce the heat to medium-low and simmer, covered, until the liquid is absorbed, 10 to 12 minutes. Remove from heat and fluff it with a fork. Transfer the Quinoa to a large bowl and cool to room temperature. Sprinkle quinoa with the salt and pepper and fold in 4 tablespoons of the lemon juice and the oil. Gently fold in the cilantro and garlic. Toss the avocado with remaining tablespoon of lemon juice. Fold the corn, onion, (chili pepper if using) tomatoes, cucumbers and avocado into the Quinoa. Serve at room temperature.

INGREDIENTS

SYRUP 250 ml water (1 cup) 625 ml white sugar (2 1/2 cups) 12 1?2 ml lemon juice (2 1/2 tsp.) 5 ml vanilla essence (1 tsp.) DOUGH 375 ml cake flour (1 1/2 cups) 22 ml baking powder (4 1/2 tsp.) 1 ml salt (1/4 tsp.) 20 g butter or 20 g margarine 150 ml milk (the vanilla soy milk gives added flavor, 5/8 cup) or 150 ml vanilla-flavored soymilk (the vanilla soy milk gives added flavor, 5/8 cup) 750 ml canola oil (3 cups)


DIRECTIONS

Put the water and sugar in a ot and bring to boil on low heat. Stir frequently until the sugar is completely dissolved. Boil for 7 minutes. Remove the pot from the stove and stir in the lemon juice and vanilla essence. Put the pot into the fridge. Mix the flour, salt, and baking powder thoroughly in a mixing bowl. Break the butter or margarine into small pieces and add to the four mixture. Add the milk. Mix well until a dough is formed. Roll the dough out to a thickness of 5 mm (+ or - 1/4 in.). Cut the dough into thin (+ or - 10 mm or 1/2 in.) strips. Take 3 strips and join their ends on one side. Braid the strips to desired koeksister length and join other ends. Heat the oil in a pot until fairly hot. Put about 3 koeksisters (or what can fit)at a time in the oil and fry them on both sides until they get a golden-brown color. As you remove the koeksisters for the oil, place them directly ito the syrup from the fridge. It is important to keep the syrup cool, so between soakings, return the syrup to the fridge to maintain its coolness. Remove the koeksisters from the syrup and allow the excess syrup to drip off. Place them in the refrigerator to cool and then eat!

SOURDOUGH ROSEMARY POTATO BREAD


INGREDIENTS

1 cup sourdough starter, brought to room temp 1 1?2 cups warm water 2 cups bread flour 1 cup mashed potatoes, plain and warm (I use prepared instant to make this quicker) 3?4 cup warm water 2 teaspoons salt 1?2 cup melted butter (can use oil) or 1/2 cup margarine (can use oil) 1?3 cup sugar 2 -3 tablespoons chopped fresh rosemary 6 -8 cups flour


DIRECTIONS

Combine the first four ingredients in a large non-metal bowl and blend well. Cover and let stand overnight till light and bubbly. Do not skip this step! Add the next 5 ingredients and 3 c flour. Mix in enough of the rest of the flour to make a soft but pliable not quite sticky dough (fingers when touching the dough should come back clean). Place dough in an oiled bowl turning once to coat both sides, cover and let rise 2 hours. Place dough on counter (lightly floured if needed) divide in 2 or three equal portions and let rest 10 minutes. Form into loaf shape and place on greased baking sheet, do not make to thick or this will never get done in the middle. Let rise till doubled. Just before baking slash the tops with a sharp knife 4-5 times. Spray dough and inside of oven w/ water (will need to repeat at least every 15 minutes) and bake in a 350 oven 1 hour for large loaves and 45 minutes for regular sized. Watch carefully to prevent overbrowning. May need to increase bake time depending on the area you live.

1 1?4 cups proofed sourdough starter 1 cup milk 4 tablespoons margarine 1?4 cup sugar 1 1?2 teaspoons salt 3 1?2 cups bread flour 1?3 cup oatmeal 1?4 cup potato flakes


DIRECTIONS

Place ingredients in bread machine pan in the order that they are listed. Select dough cycle and press start. Turn dough out on lightly floured surface and shape into desired loaf. Place in greased loaf pan and let rise, covered, until 1 to 2 inches above edges of pan. Be patient, this can take several hours, depending upon how active your sourdough culture is. Uncover and bake at 350 degrees F for about 30 minutes, or until done. Immediately turn out of pan and cool on wire rack. Brush top crust with butter for a soft crust, if desired. NOTE: You can use part whole wheat flour (up to 1 1/2 cups) in place of all white flour. I recently made this and used only 1/2 cup of whole wheat flour. It made a very nice, light wheat bread.

CAKE 1 cup sourdough starter 1?3 cup vegetable oil 1 egg (slightly beaten) 1 cup all-purpose flour 3?4 cup sugar 1?2 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon TOPPING 1 teaspoon cinnamon 1?2 cup brown sugar 2 tablespoons butter or 2 tablespoons margarine 1 tablespoon flour


DIRECTIONS

Combine sourdough starter, oil and egg. Stir together dry ingredients and add to sourdough mixture. Put dough into greased 9 inch square pan. Crumble topping ingredients together (I use a pastry blender) and sprinkle topping on top of batter. Bake for 35 minutes at 350 degrees.

1 cup sourdough starter 6 cups all-purpose flour 1 (1/4 ounce) package active dry yeast 1 1?2 cups water 3 tablespoons sugar 3 tablespoons unsalted butter 1 teaspoon salt cornmeal


DIRECTIONS

Bring sourdough starter to room temperature. In a large mixing bowl combine 2-1/2 cups of the flour and the yeast; set aside. In a saucepan heat and stir water, sugar, butter, and salt just until warm (120-130 deg.) and butter almost melts. Add to flour mixture. Add sourdough starter. Beat with until mixed and smooth, scraping bowl. Stir in as much of the remaining flour as you can. On a lightly floured surface knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic. Shape into a ball. Place dough in a lightly greased bowl, turning once to grease surface. Cover and let rise until doubled. Punch dough down. Turn out on a lightly floured surface. Divide in half. Cover and let rise for 10 minutes. Lightly grease a large baking sheet and sprinkle with cornmeal. Shape each half of the dough into a ball, place on baking sheet, flatten to about a 6-inch circle. With a sharp knife make crisscross slashes, 1/4 inch deep, on the top of the loaves. Cover and let rise 30 minutes. Preheat oven to 375-deg. After heated place bread in oven and steam. Bake in oven for 30-35 minutes, or till bread tests done. Cool on a wire rack.

1?2 cup margarine, softened 1?4 cup light brown sugar 1 large egg, beaten lightly 1 cup sour cream 1?4 cup molasses 1?2 cup raisins 1 cup all-purpose flour 1 teaspoon baking soda 1?4 teaspoon salt 1 cup natural bran (I used Quaker brand)


DIRECTIONS

Cream together butter and brown sugar until the mixture is light and fluffy. Beat together egg, sour cream, and molasses. Stir in the raisins. In a bowl whisk together the flour, baking soda, salt, and bran. Add the dry ingredients to the sour cream mixture, and stir the batter until it is just combined. (The batter will be lumpy.) Spoon into 12 paper lined muffin tins. Bake at 400F oven for 15 to 20 minutes. I baked mine 6 at a time in the toaster oven -- took 15 minutes.
