SOUTHERN FRIED CHICKEN


INGREDIENTS

2 lbs cut-up chicken SAUCE MIXTURE 4 eggs 1?3 cup water 1 cup hot sauce (I use Louisiana Hot Sauce, Tabasco might be hotter) SEASONING BLEND 1 1?2 teaspoons salt 1 1?4 teaspoons fresh ground black pepper 1?4 teaspoon garlic powder DREDGING MIXTURE 2 cups all-purpose flour 1 tablespoon baking powder 1?4 teaspoon salt


DIRECTIONS

Heat peanut oil in a large deep pot to 350F (do not fill more than half full--you don't want a hot-oil spill-over accident!). For sauce mixture: in a medium-sized bowl, beat the eggs with the water. Add hot sauce and whisk together well. Pour this mixture into a large plastic zip-top bag. For seasoning mixture: In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon freshly ground black pepper and 1/4 teaspoon garlic powder. For dredging mixture: In a another bowl, mix flour, baking powder and 1/4 teaspoon salt. Rinse and pat dry chicken pieces with a paper towel. Cut breast pieces in half across ribs. Sprinkle chicken generously on both sides with seasoning blend. Drop a few chicken pieces of chicken into bag of sauce mixture and squish around to coat thoroughly. One piece at a time, roll chicken in flour mixture and drop into hot oil. Don't crowd chicken pieces--I cook about half the chicken at a time. Fry chicken until brown and crisp. Drain on paper toweling. Dark meat will take about 14 minutes, white meat about 10 minutes. Remember smaller pieces cook faster than the larger ones. You can check for doneness by piercing to the bone in the thickest part with a fork. If the juices run clear, it is done.

SOUTHERN CINNAMON SUGARED PECANS


INGREDIENTS

1?4 cup evaporated milk 1 cup sugar 1?4 teaspoon ground cinnamon 2 tablespoons water 1?4 teaspoon vanilla 3 cups shelled pecan halves


DIRECTIONS

In a large sauce pan over medium heat, combine evaporated milk, sugar, water and vanilla. Heat mixture, stirring often, until sugar is dissolved. Add cinnamon and stir. Some may float on top. Add 3 cups of pecans to mixture and stir to cover. Continue stirring pecans in mixture until pecans become coated well and mixture cooks away (gets absorbed/crystalized on the the pecans). Spread hot coated pecans on wax paper; try to separate them as you spread them on the paper. Let pecans cool completely. Break apart pecans and store in air-tight container for up to 2 weeks. To give as gifts, put in decorative glass jars or decorative tins lined with wax paper. NOTE: I've tried using brown sugar (1:1 with the white sugar), but the pecans have a tendency to come out sticky and the sugars don't get 'crystalized'. I have not tried these with turbinado or unbleached cane sugar yet. If they don't turn out right, I'll have to keep them for myself !

DIRECTIONS

Place Quinoa in a medium-sized pan, add the water, and bring to a boil. Reduce the heat to medium-low and simmer, covered, until the liquid is absorbed, 10 to 12 minutes. Remove from heat and fluff it with a fork. Transfer the Quinoa to a large bowl and cool to room temperature. Sprinkle quinoa with the salt and pepper and fold in 4 tablespoons of the lemon juice and the oil. Gently fold in the cilantro and garlic. Toss the avocado with remaining tablespoon of lemon juice. Fold the corn, onion, (chili pepper if using) tomatoes, cucumbers and avocado into the Quinoa. Serve at room temperature.

INGREDIENTS

SYRUP 250 ml water (1 cup) 625 ml white sugar (2 1/2 cups) 12 1?2 ml lemon juice (2 1/2 tsp.) 5 ml vanilla essence (1 tsp.) DOUGH 375 ml cake flour (1 1/2 cups) 22 ml baking powder (4 1/2 tsp.) 1 ml salt (1/4 tsp.) 20 g butter or 20 g margarine 150 ml milk (the vanilla soy milk gives added flavor, 5/8 cup) or 150 ml vanilla-flavored soymilk (the vanilla soy milk gives added flavor, 5/8 cup) 750 ml canola oil (3 cups)


DIRECTIONS

Put the water and sugar in a ot and bring to boil on low heat. Stir frequently until the sugar is completely dissolved. Boil for 7 minutes. Remove the pot from the stove and stir in the lemon juice and vanilla essence. Put the pot into the fridge. Mix the flour, salt, and baking powder thoroughly in a mixing bowl. Break the butter or margarine into small pieces and add to the four mixture. Add the milk. Mix well until a dough is formed. Roll the dough out to a thickness of 5 mm (+ or - 1/4 in.). Cut the dough into thin (+ or - 10 mm or 1/2 in.) strips. Take 3 strips and join their ends on one side. Braid the strips to desired koeksister length and join other ends. Heat the oil in a pot until fairly hot. Put about 3 koeksisters (or what can fit)at a time in the oil and fry them on both sides until they get a golden-brown color. As you remove the koeksisters for the oil, place them directly ito the syrup from the fridge. It is important to keep the syrup cool, so between soakings, return the syrup to the fridge to maintain its coolness. Remove the koeksisters from the syrup and allow the excess syrup to drip off. Place them in the refrigerator to cool and then eat!

SOURDOUGH ROSEMARY POTATO BREAD


INGREDIENTS

1 cup sourdough starter, brought to room temp 1 1?2 cups warm water 2 cups bread flour 1 cup mashed potatoes, plain and warm (I use prepared instant to make this quicker) 3?4 cup warm water 2 teaspoons salt 1?2 cup melted butter (can use oil) or 1/2 cup margarine (can use oil) 1?3 cup sugar 2 -3 tablespoons chopped fresh rosemary 6 -8 cups flour


DIRECTIONS

Combine the first four ingredients in a large non-metal bowl and blend well. Cover and let stand overnight till light and bubbly. Do not skip this step! Add the next 5 ingredients and 3 c flour. Mix in enough of the rest of the flour to make a soft but pliable not quite sticky dough (fingers when touching the dough should come back clean). Place dough in an oiled bowl turning once to coat both sides, cover and let rise 2 hours. Place dough on counter (lightly floured if needed) divide in 2 or three equal portions and let rest 10 minutes. Form into loaf shape and place on greased baking sheet, do not make to thick or this will never get done in the middle. Let rise till doubled. Just before baking slash the tops with a sharp knife 4-5 times. Spray dough and inside of oven w/ water (will need to repeat at least every 15 minutes) and bake in a 350 oven 1 hour for large loaves and 45 minutes for regular sized. Watch carefully to prevent overbrowning. May need to increase bake time depending on the area you live.
