SOFT BATCH CHOCOLATE CHIP COOKIES


INGREDIENTS

1 cup butter, softened 1?4 cup sugar 3?4 cup light brown sugar, packed 2 eggs 1 teaspoon vanilla 2 1?4 cups flour 1 teaspoon baking soda 1 (4 ounce) package instant vanilla pudding 1 (12 ounce) package milk chocolate chips 1 cup walnuts, chopped


DIRECTIONS

Preheat oven to 375 degrees. Mix butter, sugar, brown sugar, vanilla and eggs together until creamy. Add the remaining ingredients and blend well. Bake until lightly browned. Store in an air tight container.

SOFT AND CHEWY M&M COOKIES


INGREDIENTS

1 cup Crisco shortening 1 cup packed light brown sugar 1?2 cup sugar 2 large eggs 1 teaspoon vanilla 2 1?4 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 1?2 cups M&M's plain chocolate candy


DIRECTIONS

Cream together shortening and sugars until light and fluffy. Add eggs and vanilla and beat until combined. Add combined flour, salt, and baking soda and mix until well combined. Stir in 1/2 cup M&Ms. Drop by Tbsp onto ungreased cookie sheet. Press 2-3 M&Ms onto top of each cookie. Bake in 375F for 10-12 minutes.

SOCCA (PROVENCAL SAVORY CHICKPEA PANCAKE) - GLUTEN-FREE


INGREDIENTS

1 cup chickpea flour 1?2 teaspoon salt 1?2 teaspoon pepper 1 cup warm water 3 tablespoons olive oil 1?2 medium onion, sliced 1?2 tablespoon fresh rosemary leaf, minced


DIRECTIONS

Place heavy (preferably cast-iron) skillet in oven and preheat to 450. In a large bowl, sift chickpea flour, pepper and salt together. After sifting, add rosemary leaves. Whisk in warm water and 2 tbsp olive oil. Cover the bowl and allow the batter set for at least 30 minutes, which should have the consistency of thick cream. Stir sliced onion into the batter. Remove skillet from oven. Add 1 tbsp olive oil to the hot pan, pour batter into pan and bake for 12-15 minutes or until the pancake is firm and the edges are set (top may not be browned). Set socca a few inches below your broiler for 1-2 minutes, just long enough to brown it in spots. Cut into wedges and serve hot, with toppings of your choice.

INGREDIENTS

2 large eggs 1 cup sugar 1 cup brown sugar 1 cup butter 1 cup peanut butter 2 teaspoons vanilla 3 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1?2 teaspoon salt 20 Snickers miniature candy bars, unwrapped


DIRECTIONS

In large bowl, combine sugars, butter, peanut butter, vanilla and eggs. Beat well. Add flour, baking soda, baking powder and salt. Mix well. Shape about 1/4 cup of dough smoothly around candy bar making sure bar is completely covered. Place 4 inches apart on ungreased cookie sheet. Bake at 375F for 13-14 minutes or until light golden brown and puffy. Cool 10 minutes and remove from cookie sheets. Makes 20 HUGE cookies.

2 eggs 1 cup butter 1 1?2 cups sugar 2 3?4 cups all-purpose flour 1 teaspoon baking soda 1?2 teaspoon salt 2 teaspoons cream of tartar 1?2 cup cinnamon-sugar mixture


DIRECTIONS

Cream butter, sugar and eggs together using a mixer. In a separate bowl, sift together all dry ingredients except cinnamon-sugar mixture. A little at a time, add the dry ingredients to the creamed butter/sugar, mixing to incorporate the flour mixture before adding more. Chill dough in the refrigerator until it is firm enough to roll into balls (check it after about 15 minutes). Preheat oven to 350 degrees. Using about a tablespoon, roll dough between your palms to form a small ball. Roll each ball in the cinnamon-sugar mixture. Place cookies on an ungreased cookie sheet, making sure you space them about 2 inches apart since they spread quite a lot. NOTE: After making each cookie sheet of balls, put the dough back into the refrigerator until you are ready to make the next batch so that it stays chilled enough to handle easily. Bake cookies for 8-10 minutes. Let cookies cool for a few minutes on the baking pan, and then let them cool completely on wire racks before packing them into cookie tins.

INGREDIENTS

3?4 cup milk 3 large eggs 1 pinch salt 1 1?2 teaspoons vanilla extract 4 slices white bread 1?4 cup white sugar 3 teaspoons cinnamon


DIRECTIONS

Mix sugar and cinnamon and set aside. Heat grill or frying pan over medium-high heat. In a small bowl, whisk milk, eggs, salt and vanilla. Pour into a flat dish that is large enough to dip bread slices into. Dip bread slices in egg mixture and poke with a fork a few times to ensure custard gets all the way through. Sprinkle one side generously with cinnamon sugar and place this side face down in lightly greased, preheated pan. Sprinkle the top side of the french toast generously with cinnamon sugar. Cook until bottom is browned, then flip and cook through until toast is slightly firm and no longer wet.
